I love peanut butter ice cream, but when the -ber months roll around, it feels like the holidays are already here! Maybe it’s because I’m from the Philippines, where Christmas 🎄songs start playing as soon as September hits.
As obsessed as I am with my Ninja Creami, I thought, why not try eggnog ice cream? Eggnog usually pops up in stores around November, but I couldn’t wait that long. Plus, with my stash of fall ice creams like Maple Coffee Ice Cream, Apple Pie Ice Cream, S’mores Ice Cream, Spiced Chai Ice Cream, Cookie Butter Ice Cream, Sweet Potato Pie Ice Cream and Pumpkin Pie Ice Cream, I knew this would be the perfect addition to my seasonal rotation!

What is Eggnog?
Eggnog (pronounced “eg-nog”) is a creamy, sweet beverage traditionally enjoyed during the Christmas season. Its rich, spiced flavor makes it a holiday favorite.
Eggnog has its origins in medieval Europe and became popular in the U.S. as a holiday treat. Traditionally made with eggs, milk, and sugar, it’s often served with a sprinkle of nutmeg. Its festive appeal and versatility make it a Christmas staple, often enjoyed with or without alcohol.
Ingredients
Here's what you'll need:
For this recipe, I use:
- Half-and-half – The creamy base that gives this ice cream its richness and smooth texture.
- Egg yolk – Adds a custard-like creaminess and helps thicken the ice cream.
- Condensed milk – Sweetens the ice cream and adds that silky texture we all love.
- Nutmeg – A pinch of nutmeg adds a subtle warmth that balances the sweetness.
- Cinnamon powder or stick – Gives the ice cream a signature holiday spice.
- Pinch of salt – Just a touch to bring out all the flavors.
- Bourbon vanilla bean paste – This rich vanilla flavor (from Trader Joe’s!) enhances the eggnog taste.
See recipe card for quantities.
Substitution and Additions
- Swap whole milk for half-and-half if you want a lighter texture.
- Replace condensed milk with coconut condensed milk for a dairy-free option.
- Add a splash of bourbon for a boozy holiday treat!
How To Make Eggnog Ice Cream?
- Combine half and half, condensed milk, cinnamon, nutmeg, vanilla, and salt. Heat the mixture on the stove, but do not boil. Temper the egg yolks by slowly adding the warm mixture while whisking, then blend until fully combined and let it cool.
- Pour the mixture into your Ninja Creami pint container and freeze for 24 hours.
- Spin the frozen mixture in the Ninja Creami using the ice cream mode.
- Serve immediately and enjoy your creamy eggnog ice cream!
🍨Mix-in or Topping Suggestion
- Crushed gingerbread cookies – Add a bit of crunch and holiday spice.
- Candied pecans – A sweet, nutty topping that complements the eggnog flavor.
- Whipped cream – A classic and simple topping to make this ice cream feel even more festive.
- Nutmeg sprinkle – For an extra kick of holiday spice.
- Mini marshmallows – Perfect if you’re feeling the S'mores holiday spirit!
- Bourbon drizzle – Take it to the next level with a touch of bourbon.
💪🏼Make It High Protein
- Add a scoop of vanilla protein powder to boost the protein content without affecting the flavor.
- Use Greek yogurt instead of condensed milk for a protein-packed alternative.
👍🏼Make It Less Sugar
- Use sugar-free condensed milk to reduce the sugar content while keeping the sweetness.
- Substitute monk fruit sweetener for the condensed milk’s sweetness.
- Use unsweetened almond milk or soy milk in place of half-and-half to cut down on sugar and calories.
Variations
- Chocolate Eggnog Ice Cream – Add cocoa powder to the base for a rich, chocolatey twist.
- Pumpkin Pie Eggnog Ice Cream – Mix in some pumpkin puree and extra spices for a fall-inspired version.
- Cookie Butter Eggnog Ice Cream – Add a swirl of cookie butter to bring even more holiday magic.
- Spiced Chai Eggnog Ice Cream – Incorporate chai tea concentrate for a warm, spiced flavor.
- Vegan Eggnog Ice Cream – Use coconut milk, a vegan egg substitute, and coconut condensed milk for a dairy-free version.
