Ingredients
Here's what you'll need:
- Chicken sausage: Adds a savory, juicy flavor to the dish. You can use smoked sausage, spicy sausage, or even turkey sausage depending on your preference. I used the Smoked Chicken Sausage I got from Costco.
- Green beans: Fresh green beans work best, but you can also use frozen. They add a nice crunch and balance the dish.
- Potatoes (cubed): Yukon gold or russet potatoes are perfect for roasting. Their crispy exterior and soft, fluffy interior make them ideal for casseroles.
- Onions: Diced onions give the dish a touch of sweetness and depth of flavor.
- Avocado oil: A healthy oil choice that’s great for roasting. It has a high smoke point and doesn’t overpower the other flavors.
- Butter: Adds richness and helps the potatoes and sausage brown nicely.
- Garlic: Provides a burst of aromatic flavor that ties the dish together.
- Maggi seasoning: A savory umami seasoning that deepens the flavor profile. If you don’t have Maggi, you can substitute with soy sauce or Worcestershire sauce.
- Cajun seasoning: Adds a little heat and spice to the dish. Adjust the amount to suit your taste. I used the Slap Ya Mama brand.
- Pepper: For seasoning to taste.
- Green onions (for garnish): Optional, but they add a nice pop of color and freshness at the end.
See recipe card for quantities.
Substitution and Additions
- Sausage: You can swap the chicken sausage with pork, beef, or turkey sausage. Smoked sausage or even chorizo would give it a completely different, delicious twist.
- Green beans: If you don’t have green beans, try using asparagus, broccoli, or even zucchini. They all work well in this recipe.
- Potatoes: Sweet potatoes can be used in place of regular potatoes for a sweeter, more nutritious alternative.
- Butter: For a dairy-free option, you can substitute the butter with olive oil or more avocado oil.
- Seasonings: If you’re not a fan of Cajun seasoning, try using Italian seasoning, paprika, or even a sprinkle of chili flakes for extra heat.
- Cheese: For a cheesy version, sprinkle shredded cheddar or mozzarella on top and broil until bubbly and golden.
How To Make Sausage Green Bean Potato Casserole?
- Preheat the oven: Start by preheating your oven to 400°F (200°C).
- Toss the potatoes in avocado oil, fry until golden brown, and then transfer them to a bowl or baking tray. Do the same to the sausages.
- Sauté garlic and onion in until fragrant, then pour the mixture into the bowl or baking tray.
- Boil or steam the green beans in a skillet for about 5 minutes, until tender but still vibrant. Drain and add to the bowl or baking tray.
- Season everything with Cajun seasoning, salt, and pepper, and toss to combine.
- Bake for 25 minutes, then serve hot.
Variations
- Cheesy Casserole: Sprinkle shredded cheddar or mozzarella on top and broil for 2-3 minutes until melted and bubbly.
- Spicy Casserole: Add diced jalapeños or a pinch of red pepper flakes for some extra heat.
- Vegan Casserole: Use vegan sausage and replace butter with olive oil for a plant-based version.
- Creamy Casserole: Stir in ¼ cup of heavy cream or sour cream for a richer, creamier dish.
- Add Bacon: Crumble cooked bacon over the top for an extra layer of savory flavor.
- Herbed Casserole: Toss in fresh herbs like rosemary, thyme, or parsley to brighten up the flavors.
What To Serve With This?
- Fresh Salad: A light garden salad with a lemon vinaigrette or balsamic dressing adds a refreshing contrast to the hearty casserole.
- Crusty Bread: Serve with a warm, crusty baguette or dinner rolls to soak up the flavorful juices from the dish.
- Grilled Vegetables: Add a side of grilled zucchini, bell peppers, or asparagus for extra vegetables and smoky flavor.
- Mashed Potatoes: For a double dose of comfort, serve the casserole with creamy mashed potatoes.
- Rice: A simple side of steamed rice is always a good idea to complement the savory sausage and crispy potatoes.
- Caesar Salad: A fresh Caesar salad adds a refreshing crunch and lightens up the meal.
- Macaroni and Cheese: Creamy, cheesy mac and cheese is a comforting side that pairs perfectly with the sausage and potatoes.
- Roasted Brussels Sprouts: Slightly crispy, roasted Brussels sprouts add a healthy, flavorful balance to the dish.
- Baked Beans: Sweet and smoky baked beans are a classic side that adds even more heartiness to the meal.
- Honey-Glazed Carrots: Sweet and tender honey-glazed carrots offer a delicious contrast to the savory casserole.
- Biscuits: Fluffy, buttery biscuits are the perfect side for enjoying with your casserole.
- Pickled Vegetables: Tangy pickled vegetables add a nice zing and balance out the richness of the casserole.
- Rice Pilaf: Light and fluffy rice pilaf helps absorb the flavors and adds a bit of elegance to the meal.
- Roasted Asparagus: Simple roasted asparagus brings a touch of earthiness and freshness to the table.
