This Ninja Creami sweet corn ice cream is my way of bringing that flavor home, using five simple ingredients and zero stovetop work. No cooking, no eggs, no custard. Just blend, freeze, and spin.

Why Corn Works in Ice Cream
Sweet corn has a natural, mellow sweetness that translates beautifully into a frozen dessert. Once it's blended into a creamy base, it doesn't read as savory at all. It tastes like summer, warm and familiar but completely unexpected.
In the Philippines, corn is a classic dessert flavor. It shows up in halo-halo, in shaved ice like mais con yelo, and in ice cream shops as one of the most-loved flavors on the menu. We even have mais con keso, corn and cheese ice cream, and yes, it works.
This is the flavor that makes people take one bite, pause, and immediately go back for more.
Ingredients
Hereโs what youโll need:
- Sweet corn - Canned whole kernel or cream-style both work. Drain it well before blending. No need for fresh corn here, though fresh sweet corn in peak summer is wonderful if you have it.
- Half and half - Gives the base that creamy richness without being too heavy. Oat milk, soy milk, or coconut milk all work as dairy-free swaps.
- Sweetened condensed milk - Sweetens the base and helps with the final texture. Monk fruit, agave, or honey work if you want to adjust the sweetness level.
- Vanilla extract - Rounds out the flavor and ties everything together.
- Cottage cheese - Sounds unusual but blends completely smooth and adds creaminess and protein. Cream cheese is a fine substitute.

How To Make Sweet Corn Ice Cream

- In a blender, sweet corn, half and half, cottage cheese, and condensed milk. Pour the blended mixture into a Ninja Creami pint container, making sure it does not exceed the max fill line.

- Place the pint container in the freezer and freeze for at least 18-24 hours.

- After freezing, remove the pint container from the freezer and place it into the Ninja Creami machine. Attach the pint holder lid and lock it into place. Select the "Lite Ice Cream" setting and let the Ninja Creami process the mixture. *see notes

- Scoop the sweet corn ice cream into bowls and top with your favorite toppings.
Topping Ideas
- Shredded cheese - This is the Filipino way and it genuinely works. Sweet and salty is the whole point. Sharp cheddar is the move.
- Caramel drizzle - Warm caramel over cold sweet corn ice cream is a very good idea.
- Toasted coconut flakes - Adds crunch and a natural sweetness that pairs perfectly.
- Crushed graham crackers - Easy, crowd-pleasing, and adds a little texture.
- Rainbow sprinkles - Very Filipino ice cream shop energy. Highly recommended.
Variations and Swaps
Dairy-free: Swap half and half for oat milk, coconut milk, or soy milk. Replace cottage cheese with a dairy-free cream cheese alternative.
Lower sugar: Use monk fruit sweetener or agave instead of condensed milk. Start with less and taste before freezing since you can always add more but can't take it away.
Mais con keso style: After spinning, use the mix-in function and fold in a small handful of shredded sharp cheddar. It is the classic Filipino corn and cheese combo in ice cream form and it is worth trying at least once.
Rose's Tips for the Creamiest Result
- Blend until totally smooth. Any corn pieces left in the base will affect the final texture. Blend on high for at least 60 seconds and check before pouring into the pint.
- Don't skip the rest time. Letting the pint sit out for 5 minutes before spinning almost always prevents the need for a respin. The outer edge softens just enough for the machine to process it evenly.
- Cream-style vs. whole kernel corn. Cream-style gives a slightly smoother base. Whole kernel works fine, just blend extra thoroughly.
- Taste the base before freezing. Canned corn varies in natural sweetness. If it needs more, add a little extra condensed milk before pouring into the pint.
