This salted caramel basque burnt cheesecake comes down to six ingredients and one bowl, no crust, no water bath, just cream cheese and dulce de leche turning into something that looks far more complicated than it actually is. The caramelized top does most of the work.

How This Recipe Came Together
This started with my Ube Basque Burnt Cheesecake, same base recipe, just different flavors. Both lean on caramel, but I wanted this one creamier, so instead of a sauce, I mixed in homemade dulce de leche right into the batter. Caramel is just cooked sugar. Dulce de leche is slow-cooked milk and sugar, which is why it comes out richer and smoother. That one swap made the difference.

- Make-Ahead Friendly - Tastes even better after setting overnight in the refrigerator
So, What Is a Basque Burnt Cheesecake?
It’s a crustless cheesecake baked at high heat. The top looks burnt but adds flavor. The inside stays creamy and custard-like.
The salted caramel twist comes from using dulce de leche and a pinch of salt. It’s rustic, easy, and impressive.
What You’ll Need
This is just an overview, jump down to the full recipe card for exact amounts and detailed instructions.
- Cream Cheese - The main body of the cheesecake. Philadelphia works beautifully, but any full-fat block cream cheese will do. Avoid spreadable varieties in tubs, they contain stabilizers that affect texture. Room temp is best.
- Heavy Cream - Adds richness and helps keep the texture soft and pourable.
- Dulce de Leche - Gives it caramel flavor and extra creaminess. No time to make your own? Store-bought works perfectly. Can't find it? Substitute with thick caramel sauce and a tablespoon of heavy cream.
- Vanilla - Adds warmth and balance.
- Salt - Just a bit brings out that caramel flavor.
- Eggs - Help set the cheesecake and give structure.
See recipe card for quantities.
Let’s Make It
- Preheat your oven to 400°F. Line your 9 inch springform pan with parchment, letting it extend a couple inches above the rim, since basque cheesecakes bake nearly to the top.
- Beat the cream cheese and dulce de leche until smooth using a hand or stand mixer.
- Add the eggs, mixing until fully combined.
- Pour in cream, vanilla, and salt. Mix until silky and smooth.
- Pour the batter into your lined pan. Tap it gently to release air.
- Bake for 50–60 minutes. The top should look dark and puffed.
- Cool it at room temp, then chill for at least 4 hours before slicing.
Want to Switch It Up?
- Espresso Cheesecake – Add 1 tablespoon espresso powder.
- Chocolate Swirl – Drop in spoonfuls of melted dark chocolate and swirl.
- Pumpkin Spice – Add ½ cup pumpkin puree and spices.
- Lemon Caramel – Use lemon zest and juice for a tangy twist.
- Mini Cheesecakes – Bake in muffin tins for single-serve treats.
What Goes Well With It
- Fresh Berries - The bright acidity of raspberries or blackberries provides perfect contrast to the rich cheesecake
- Coffee Ice Cream - Doubles down on those roasty notes that complement the burnt edges
- Candied Pecans - Add delightful crunch and nutty dimension to each bite
How to Store Leftovers
This cheesecake actually improves with time!
Store leftovers covered in the refrigerator for up to 5 days, allowing the flavors to deepen and mature. For longer storage, freeze individual slices wrapped tightly in plastic wrap and aluminum foil for up to 3 months.
Rose's Top Tips
- Room temperature ingredients are non-negotiable - Cold cream cheese leads to lumps that will never fully incorporate, no matter how long you mix.
- Let it jiggle - The center should wobble significantly when done; it will set as it cools and creates that perfect custardy texture.
- Don't skip parchment - it keeps cleanup easy and avoids sticking. Don't stress about making the paper lining perfect; those characteristic creases add to the rustic appeal.
- Let it cool completely before refrigerating - Rushing this step can cause condensation that affects the texture.
Recipe FAQs
Yes! Caramel is made by melting sugar. Dulce de leche is made by slowly cooking milk and sugar together. It’s creamier and less bitter.
Kind of! It's sweetened condensed milk that’s been slowly heated until it thickens and darkens into a spreadable caramel-like consistency.
You can use store-bought caramel, but the texture won’t be as creamy. Another option is to cook sweetened condensed milk yourself.
Salted caramel has, you guessed it—salt added! It balances the sweetness and enhances the flavor.
