Every mango season I buy a whole box, and the firm ones get made into this before they have a chance to soften.
That's not me being organized. It's the only way I've found to get my family eating vegetables without a negotiation. They already love mango, they love cucumber, so a bowl of mango cucumber salsa disappears in a way that a plate of cut vegetables never does.
The firm mango is also the part most recipes get wrong. Most mango salsa recipes tell you to reach for the softest, ripest mango you can find. Ripe mango turns to mush the moment you stir it, and it weeps liquid into the bowl. Firm mango holds its shape and its bite.
The soft ones from the box don't go to waste. Those become mango bango or mango ice cream, where you want them sweet and yielding.
No cooking, about 15 minutes of chopping, and it holds up on the table through a whole summer afternoon. Most of it gets eaten with chips, but my favorite way to serve it is spooned over blackened salmon while the fish is still hot.

Why This Salsa Works
- Firm mango instead of ripe. The change that makes the biggest difference. Ripe mango falls apart when you stir it and leaves liquid pooling at the bottom of the bowl. Firm mango stays in clean cubes and keeps its texture.
- Cucumber and tomato instead of bell pepper. Most mango salsa recipes reach for bell pepper. Cucumber gives you a cleaner, cooler crunch, and the tomato keeps things savory so it doesn't read as fruit salad.
- Nothing gets cooked. Chop, toss, rest. About 15 minutes, and most of that is knife work you can do while something else is on the stove.
- It survives sitting out. Seeding the cucumber and tomato and draining before serving means it stays crisp on the table instead of going soupy after twenty minutes.
Ingredients
- Mango, firm and diced. Ripe in flavor but still firm, with only a little give. Soft mango collapses when you stir it and leaves liquid in the bottom of the bowl. Color tells you nothing here, so go by feel.
- Cucumber, seeded and diced. The crunch that keeps this from reading as fruit salad. Scrape out the watery seed core or the salsa turns soupy within the hour. English cucumbers need no peeling.
- Tomatoes, seeded and diced. Keeps things savory instead of sweet. Roma holds its shape better than beefsteak. Leave them out if you want the mango further forward.
- Red onion, finely diced. The sharp note that cuts the sweetness. Dice it smaller than everything else so no one gets a full bite of raw onion. Rinse and pat dry if it tastes harsh.
- Jalapeño, seeded and finely diced. Optional, but the heat gives the sweetness something to push against. Seeds and membrane carry most of it, so removing them leaves flavor with only mild warmth.
- Fresh cilantro, chopped. Adds a green, citrusy note. Stir it in last, since it darkens if it sits in the lime juice.
- Lime juice. Brightens everything and slows the mango from browning. Use fresh. With this few ingredients and no cooking, bottled tastes flat. Calamansi works and gives rounder acidity.
- Salt. Seasons and pulls a little water out of the cucumber and tomato as the salsa rests. Start light, then adjust after resting, because it tastes different once it sits.

How to Cut a Mango
Mangoes have a large flat pit running through the center that doesn't come loose the way a peach stone does. Once you know where it sits, this takes a minute.
- Stand it on end. Stem side down, narrow edges facing left and right. The pit runs vertically through the middle.
- Slice down both sides. Cut about a quarter inch off center on each side. If the knife hits something hard, move out slightly.
- Score a grid. Holding the skin side, cut lines through the flesh down to the skin but not through it, one direction then the other. Quarter inch squares for salsa.
- Slice the cubes free. Run your knife flat between the flesh and the skin.
- Trim the center piece. Cut the skin off in strips, then slice the flesh away from the pit.
How to Make Mango Cucumber Salsa
- Salt the cucumber. Dice it, toss with a pinch of salt, and leave it in a colander while you prep everything else. This pulls out the water that would otherwise end up in the bowl.
- Dice the mango. Quarter inch cubes, using the method above. Firm mango will hold these edges.
- Prep the rest. Seed and dice the tomatoes. Finely dice the red onion and the jalapeño, smaller than everything else. Chop the cilantro and set it aside
- Drain and dry the cucumber. Press it gently against the colander and pat with a paper towel. It should feel dry, not damp.
- Combine. In a large bowl, fold together the mango, cucumber, tomato, onion, and jalapeño. Fold rather than stir so the mango stays intact.
- Dress it. Squeeze in the lime or calamansi juice, add salt, and fold again. Go light on the salt since the cucumber is already seasoned.
- Rest 15 minutes, then finish. Let it sit at room temperature. Pour off any liquid that collects, stir in the cilantro, and taste for salt and lime before serving.
What to Serve With Mango Cucumber Salsa
- Chips. The default, and the reason most of a batch disappears before dinner. Sturdy restaurant-style chips hold up better than thin ones, since this salsa has weight to it.
- Fish tacos. Where it does the most work. The sweetness and acid cut through fried fish the way a slaw would, and you get crunch at the same time.
- Grilled or blackened fish. Spoon it over while the fish is still hot so it warms slightly without cooking. This is what I make with my blackened salmon, and it works on any firm white fish too.
- Shrimp. Grilled, pan-seared, or piled into tacos. My one pan spicy shrimp is the fastest version, and the heat gives the mango something to push against.
- Grilled chicken or pork. Anything with char on it. The smoke has something to push against.
- Rice bowls. Spoon it over rice with a protein and it turns into a full plate rather than a side.
- Eggs. Not the obvious one, but it's good on scrambled eggs or folded into an omelet the morning after you make a batch.
Substitutions and Variations
- No cilantro? Use mint or flat-leaf parsley. Mint leans it sweeter and pairs well with shrimp. Parsley is neutral, adding green without a flavor of its own. Neither tastes like cilantro, so think of it as a different salsa rather than a fix.
- Bell pepper for the cucumber. Same crunch, more sweetness, less water. The better choice if you're making this hours ahead. You lose the cooling quality the cucumber brings.
- Serrano or poblano for the jalapeño. Serrano is hotter and thinner-walled, so use less. Poblano is mild and meaty, so a whole one gives you flavor without much heat.
- Pineapple or peach for the mango. Pineapple is sharper, so pull back on the lime. Peach is softer, so dice it larger and fold gently.
- Skip the heat entirely. Leave the jalapeño out. The onion and lime carry enough contrast on their own.
- Add avocado. Fold it in last and be gentle or you'll have mango guacamole. It shortens the salsa's life, so only add it to what you're serving now.
- Add black beans and corn. Turns this from a dip into a side you can spoon over rice. Add extra lime and salt for the volume.
- A pinch of cumin. Warm and earthy under the fruit. Start with a quarter teaspoon.
Storage and Make Ahead
- Best within a few hours. This is when the cucumber is at its crispest and the mango still has clean edges. If you're making it for a party, aim for two to three hours ahead.
- Good the next day. Store in an airtight container in the fridge. Pour off the liquid that collects and give it a stir before serving. The cucumber softens but it's still worth eating.
- Day three is pushing it. The cucumber has gone limp and the tomato has broken down. Edible, not what you want to put out.
- Refrigerate within two hours of making it, sooner if it's been sitting out in the heat.
- Add avocado only to what you're serving. It browns and turns soft, and it takes the rest of the bowl down with it.
- Don't freeze it. Mango, cucumber, and tomato all turn to mush on thawing. There's no version of this that survives it.
Recipe FAQs
Why is my mango salsa watery?
Usually the mango was too ripe, or the cucumber and tomato weren't seeded. Ripe mango breaks down and releases juice as you stir. The seed cores of the cucumber and tomato hold most of their water. Salting and draining the cucumber before mixing solves most of it, and any liquid that still collects can be poured off before serving.
Can I use frozen mango?
It works, but the texture won't be the same. Freezing breaks down the flesh, so thawed mango is softer and wetter than fresh and it won't hold clean cubes. Thaw completely, drain well, and expect a looser salsa. Fresh firm mango is worth the difference here.
Can I make it ahead?
Yes. Two to three hours ahead is the sweet spot, giving the flavors time to come together while the cucumber stays crisp. It holds overnight in the fridge, though the cucumber softens. Drain and stir before serving. Leave the cilantro out until just before it goes on the table.
Is this the same as salsa de mango?
Salsa de mango can mean two different things. Some versions are a smooth blended sauce you spoon over meat or fish, and others are a fresh chopped salsa like this one. This is the chopped kind, with cucumber and tomato added for crunch.
What if I don't have limes?
Lemon works, and calamansi is better if you can find it, giving a rounder acidity that suits the mango. Use fresh either way. Bottled juice tastes flat in a recipe with this few ingredients.
More Fresh Sides and Dips
- Mexican Street Corn Pasta Salad — the other thing I bring to a cookout. Same table, same crowd, and it holds up outside just as well.
- Thai Peanut Sauce — another no-cook sauce worth keeping in the fridge. Good on grilled chicken, spring rolls, or anything that needs a dip.
- Homemade Caesar Salad — when you want something crisp and green next to the grill instead of another fruit or corn dish.
- Simple Green Salad — five minutes, and it balances a plate that's already sweet and rich.

Notes
Mango firmness. Use a ripe mango that is still firm with just a little give. If it is too soft, it can break down when mixed and release extra liquid into the salsa. Go by feel instead of color, since mangoes can turn red or golden before they are fully ripe.
Remove the seeds. Cucumber and tomato seeds hold a lot of water, so removing them helps keep the salsa fresh and crisp instead of watery. Salting the cucumber also helps draw out excess moisture.
Adjust the heat. For a milder salsa, remove the seeds and white membrane from the jalapeño. Leave them in if you like more heat, or skip the jalapeño altogether.
Add cilantro last. Cilantro can darken and lose some of its fresh flavor as it sits in lime juice. If making the salsa ahead, stir it in just before serving.
Make ahead. You can make the salsa 2 to 3 hours ahead and refrigerate it until ready to serve. The flavors will have time to blend while the cucumber stays crisp. If refrigerating overnight, drain any extra liquid and give it a good stir before serving.
Storage. Store leftovers in an airtight container in the refrigerator for up to 2 days. Freezing is not recommended because the mango, cucumber, and tomato will become soft after thawing. If adding avocado, mix it only into the portion you plan to serve.
