Instructions
Preheat your oven to 375°F (190°C). In a large baking dish, toss together cherry tomatoes, garlic, onion, olive oil, salt, and pepper.
Nestle the Boursin cheese in the center of the dish.
Bake for 15 minutes, or until the tomatoes are blistered and the Boursin is melted.
While the dish bakes, cook your pasta according to package directions until al dente. Reserve some of the pasta water before draining.
Once the Boursin mixture is melted, carefully remove it from the oven. Toss the cooked pasta with the roasted vegetables and Boursin, adding a splash or two of reserved pasta water to create a creamy sauce.
Squeeze a lemon and garnish with fresh herbs (optional) and serve immediately.
Notes
Reserve some pasta water to help thin out the sauce if needed.
Don't overcook the garlic; it can turn bitter if it burns.
Use room temperature Boursin for easier melting.
For extra flavor, drizzle some olive oil over the pasta before serving.
