Sweet potato wedges cut thick, tossed with avocado oil and a garlic-paprika blend, and air fried at 400°F until the edges crisp and the centers turn soft. No soaking and no parboiling, so they go from cutting board to plate in about 25 minutes. Serve them as a side or a snack with whatever dipping sauce you have.
Peel the sweet potato and trim both ends. Halve it lengthwise, lay each half cut side down, and halve again. Slice each quarter into 2 or 3 wedges, keeping them even in thickness. Trim off any very thin end pieces.
2 medium size American Garnet Yam
Pat the wedges dry. Toss with the avocado oil until coated, then add the garlic powder, paprika, salt, and pepper and toss again.
2 tablespoon Avocado Oil, 1 teaspoon Garlic Powder, ¾ teaspoon Salt, ½ teaspoon Paprika, ⅛ teaspoon Black Pepper
Arrange in a single layer in the preheated basket with space between the wedges. Cook in batches if needed.
Air fry 15 to 18 minutes, flipping halfway through. They are done when the edges are crisp and a knife slides into the thickest wedge with no resistance.
Season with a pinch of salt while hot and serve right away.

Air fryers vary. Start checking at 15 minutes, and knock 1 to 2 minutes off a second batch since the basket is already hot.No soaking needed. Sweet potatoes have less starch than russets, so the soak makes little difference.Oven method: 425°F on a preheated sheet pan, 20 minutes, flip, then 10 to 15 more.Leftovers keep 4 days in the fridge. Reheat at 350°F for 4 to 5 minutes in the air fryer.
