A wheel of brie scored, topped with rosemary, dried cranberries, and chopped nuts, then baked until the center is soft enough to scoop. Finished with hot honey off the heat so the chili stays sharp instead of dulling in the oven. Works in the oven or the air fryer, about 20 minutes start to finish.
Preheat the Oven or Air Fryer. Preheat your oven to 350°F or set your air fryer to 320°F.
Prepare the Brie. Place the wheel of brie on a baking sheet lined with parchment paper.
1 wheel Double or triple cream brie
Score the Cheese. Using a sharp knife, score the top of the brie in a criss-cross pattern. This allows the toppings to sink into the cheese as it bakes.
Season and Top.Add a pinch of salt and pepper over the brie. Sprinkle the chopped rosemary, cranberries, and nuts on top.

Drizzle Olive Oil. Pour a small amount of extra virgin olive oil over the brie for added richness and flavor.

Bake or Air Fry. Bake for 15 minutes in the oven or about 10 minutes in the air fryer at 320°F, until the cheese is soft and melty.
Add the Hot Honey. Remove from the oven and drizzle generously with hot chili honey for a sweet, spicy finish.

Serve Immediately.Serve warm with apple slices, crackers, or a side of cranberry sauce for dipping.
Notes
Wheel size: Written for an 8 ounce wheel. A larger wheel needs a few extra minutes, a smaller one a few less. Start checking at 10 minutes either way.Doneness: Press the center with a fingertip. It should give easily and feel like it would collapse under more pressure. If it still feels firm, add 2 to 3 minutes at a time. A cold wheel or a thick rind will run longer.Air fryer: Set to 320°F and cut a parchment round for the basket. About 10 minutes, same press test.Hot honey: Store-bought works. To make your own, warm honey with a pinch of red pepper flakes and a splash of vinegar, then cool. Always drizzle it after baking, not before, since the chili heat dulls in the oven.Make ahead: Score and top the wheel up to a day in advance, cover, and refrigerate in the baking dish.
