This easy everyday green salad is fresh, simple, and ready in minutes. Made with mixed greens, avocado, and tomatoes, it’s the perfect go-to side or light meal.

Instructions
Dressing
In a small mixing bowl or jar, whisk together extra-virgin olive oil, Dijon mustard, and vinegar (either red, white, or lemon juice-whichever you prefer).

Add 3 teaspoons of your chosen sweetener, agave syrup, maple syrup, or honey and stir well.

Toss in the minced garlic clove, and season with a pinch of salt and freshly cracked black pepper to taste.

Whisk or shake the mixture until everything is well combined and emulsified.
Taste and adjust seasoning if needed.
Salad
Rinse your mixed greens and pat them dry with a paper towel. Dry greens are key to a crisp salad!
1 bowl Mixed Green
If you're not using pre-chopped greens, roughly chop them into bite-sized pieces. Give the cucumber a quick dice, and halve or quarter cherry tomatoes.
½ cup Cucumber, ⅔ cup Tomatoes
In a large bowl, combine the greens, cucumber, and tomatoes.
Halve, pit, and scoop out your avocado. Dice it or mash it slightly with a fork, then add it to the bowl.
1 small Avocado
Drizzle with your favorite dressing (store-bought or homemade) and toss gently to coat everything. Sprinkle with chopped nuts.

Notes
Dry greens matter. Make sure your greens are completely dry before dressing for the best crunch.
Add avocado last. This keeps it from getting mushy or browning too fast.
Dress just before serving. Tossing too early can make the salad wilt.
Make it your own. Swap nuts, add cheese, or throw in extra veggies you have on hand.
Dressing tip. Start with less dressing and add more as needed — a little goes a long way.
