This simple and heart-warming easy chicken papaya soup (tinola) is the prefect remedy for cold or rainy days or when you need a comforting boost while feeling under the weather.
1bunchmalunggay leaves, bokchoy, spinach or pepper leaves

Instructions
Heat some oil in your pot and saute garlic, onion, and ginger.
2 tablespoon olive oil, 1 tablespoon garlic, crushed, 1 medium onion, chopped, 3-4 thumbs ginger, sliced into strips
Now, throw in your chicken and give it a good sear on all sides.
2 pounds chicken thighs or legs
Pour in your water, or chicken broth. Over medium hear, let it simmer for 15-20 minutes.
6 cups chicken broth or water
Add chayote or green papaya, or your chosen leafy greens. Give them 5-10 minutes to soften up, but keep a bit of that satisfying crunch.

Finally, it's time for the grand finale! Add a splash of fish sauce (patis) and give it a gentle stir.

Notes
To enhance the flavor, use bone-in chicken cuts for the broth. This creates a richer, more flavorful soup base! Although chicken breast works well, I suggest using chicken broth to boost the chicken taste.
